How do you tell what badges an Airman should have had based on their MOS/AFSC?

I am attempting to build a Shadow Box for my grandfather who served in the Air Force during Vietnam and in the Air National Guard during the Cold War.

He was a Security Policeman and a Medical Administrative Specialist, what occupational badges would he rate with those MOS/AFSC?

I would go off of your Grandfathers DD214 for starters. The USAF occupational badges started being phased in during the 1950's so I would think they would be listed in the paperwork. If there is anything missing after that I would do some research on a case by case basis.

As mentioned, the DD-214 is the source for correct information on badges and ribbons.

Depends on the years he served in various AFSC. In Vietnam era, most AFSC didn’t have badges. Security always had large badge, see MSG Private RallyPoint Member post. Try consulting Wikipedia or Air Force history office.
