If I know nothing about electronics, how difficult will it be to pass 62A AIT? Would studying everyday cut it? How basic are courses 1 & 2?

Everything in the Army is broken down Barney style. You learn the basics of your job in AIT. Most of your actual training happens OTJ and it's broken down into skill levels. Once you reach E-5, the leadership schools you go to will teach you slightly more advanced aspects of your job.
You obviously have some understanding of electronics, otherwise you wouldn't have had the line scores to get the MOS. Don't sweat it too much. Everything will be spoon fed to you.
