What is your favorite go to spice? As for me, I will start this off with the most basic of spices: Salt, I use Kosher salt, sea salt, and plain granulated depending on what and how long it is going to be on the grill for. Big Kosher is good for stuff that is going to render for hours, but not the best choice for quick stuff. I have also used Kosher in a pinch when I lived in Texas and a had a freak freeze down there. Sidewalk was covered in ice, so being the good Yankee I am I broke out the 5 pound box of kosher. Situation fixed itself in a few minutes. I must have 4 square feet of spice bottles. Add a little allspice, cinnamon, ginger, and pimentos to your bbq sauce or chili. Not too much. However, if I were to choose only one spice off the top of my head, I would absolutely say lemon&pepper. You can NEVER go wrong with lemon&pepper, REGARDLESS of the meat.
