I was holding down the line while the other Line Chefs were at lunch and about 4 orders came in on the printer right after another.. 1. a third lb Gr -rd burger, light sautéed onion, Tom, Let and aioli on the side. 2. Half order, deep fr. onion strips,
3. Half order deep fr. Shrooms 4. Order of stuffed shrooms, horseradish chse
Instead of jack. I can see these guys are playing me.... yep ! That change meant I had to go off the line to the cooler. ..
I was back really quick, finding what i needed.. So I got all their orders working and set up their plates.. Plated it all and sent them out together.. a few minutes later the server came back and the guys were complaining because it came out together.. geez ! What is their major
Malfunction, everything came in together it went out together!.. What did they want, the server to make 4 trips? .. I had also made my lunch and it was ready also.. as they came back, I briefed the window guy and went to lunch.. no more orders came as i was having my lunch in the bar.. I would be off in another hour and a half .. I got back to the line and the guys were wiping down.. there couldn't have been much I had kept it pretty clean.. So... were you busy while I was at lunch, I asked. Not a ticket, Chef..
hmm ... the most junior guy was pulling pans and getting reset up for dinner., the others were leaning on the counter..
ok, you know my saying: "you got time to lean.. you got time to clean !" let's give J some help.. ..

"Anybody can hold the helm when the sea is calm !" Get on the stick and get this line done!.. in a few minutes we were done.... it doesn't take long when e'body pitches in. I went back and made a count in the cooler.. against the production sheet.. everything done..
And my relief and the other crew is in. I brief him and then and go get signed out..
