There are many appliances, such as fire walls an customized servers that run Linux, CentOS being one of the key players. The great thing about them is that they just work. Once they are up an running the OS is so stable. Other than updates to software installed on it we have little else to worry about. The only other thing that could be an issue is hardware failure. The last OS M$ had that was that stable was NT 4.0
