Good luck saving the atmosphere of the bistro. The kids don't want to look up from their phones

All they would have to do is treat it like a starbucks. But there is also another explanation, as the population diversity pushes some out of their neighborhoods, the demographic causes the bistros to suffer. Devout muslims do not drink nor do they eat pork and bistros serve a lot of beer/wine as well as croque-monsieur which is made with pork.
