At an early job I had as a Cook at a restaurant, a new young guy came on that was an immigrant and I was to train him to take my job.. he was a work in progress(a lot of work!).. it was not one of my desires to stay there unless I could Move up the ladder. I knew that took time at some places. I took Manny
In back and got him outfitted (jacket, trousers, hat, apron, took box[spatula, knives, steel, peeler, and a few other small tools]).. then I took him to the job books ( each prep job, the time expected to complete the job, the time the job completed(blank to be filled in when Job completed for person perform'g job. Info transferred to that person's sheet in Chef's notebook) to the coolers and freezer, each had a diagram where each item goes thawing items on bottom shelf with drip pans below.. no food on floor ! Even beverages(heavy cream, milk, etc. in cases are 1ft off the floor set on a empty crate. Box on wall for date/time labels, markers.. Fifo(first-in, first out) is the rule . I was consistently working with him so he can get s'thing without anybody telling him where it is and get it cooking.. it took a few weeeks but we got there..got him so he could do his job w/o s'one hanging over him e'y second.. I'm working and waiting for day I'm told my Svcs are no longer needed.. Mr. K. Came to me with that look on his face that s'thing was not going to be good news.. "Chef"(I was not expecting that title). I have bad news... (here it comes, or so I thought)..
Chef Gary has left us to run another of our Restaurants. He said if you need any info of certain things you can call and he'll assist you. We'll be here for you also. He assured us that he felt you were best choice for Chef D' Cuisine.. and we agreed. In actuality you've been doing many of his duties for the past two weeks as he's been at the other restaurant, so your pay increases by $1.50 per hr. or $15.00 more a day on top of the $80.00 day I earned as assistant Chef. he thought he'd take his girl out for dinner.. I hoped that paved over some rough spots.. for a while !
