Cut a whole pound of bacon into 1-2 inch long pieces. Fry it in the bottom of a dutch oven, when almost done add a small chopped onion and 2 crushed garlic cloves. When the bacon is just getting crispy add 6 cups of water, 1 pound dried split peas, 1 tbsp Worchester sauce, and 3 tsp Caldo con Sabor de Pollo. I tsp black pepper if you like it. Salt to taste. Heaven.

Thick cuts from the slab (with the Chicharrón intact) are good oven roasted.
