I've not had kangaroo but people in Australia survived on it for years. I tried elk and antelope, both were very good. Chili is a cover for inexpensive meat.

Put enough peppers in chili and even an old shoe will taste good. Lol

Isn't that the point of chili? You can make it with any meat, any roadkill. The chilies will provide all the flavor (heat)
