How should I compose an email to my assignment manager. I am about to be put on assignment and I would like to request fort Carson due to the career opportunities, my fiancé being stationed there, and family that is being located in Colorado.

Start by updating your ASK.
In your email, state what you want first - the intent of the email - and then a short description why. Your story is irrelevant and he has to read hundreds of emails a day, don't make him dig through your email to figure out what you want.
As one counselor used to tell me, "An email to HRC should be like a woman's skirt - short enough to keep your attention, but long enough to cover everything".

Umm... You're a PVT... You shouldn't be sending an email to anyone... Sorry, but the branch manager has far more important people to deal with than a PVT... Unless you are coming off of a deployment, which you more than likely are not seeing as how you are a PVT, you have no pull to get an assignment given to you b y branch... If you are coming out of basic/OSUT/AIT then you were given an opportunity to put in your wishlist and that is about all the agency that you have in this matter.

SFC Kelly Fuerhoff - For those extremely small communities of MOSs, I imagine that it may be a far more common practice, but even then, I would think that they would be far too busy for an E-1... That seems a little ridiculous. You do what big army tells you at that point in your career.

Needs of the army is one thing. You can tell him to go ahead and ask without getting his hopes up. Personally I'd rather call than email. No need to just "suck it up and drive on" simply because you're the new guy. Fort Carson is a big place with no shortage of 11B slots. it can't hurt to ask. Now, granted, being in IET status doesn't give him a whole lot of say in the matter, but again, it can't hurt to ask.

As a Branch Manager (BM) myself, I pride myself on helping all my customers (E1-E8) alike. However, AIT/OSUT Soldiers are not managed by your normal BM, they are managed by IET branch which have their own priorities based on strengths. With that said, you are at the Army's mercy coming out of AIT/OSUT.
