If it's not in your OMPF under your separation files, it's gone. Counseling files are destroyed when you leave the unit.

That's what I've been told. I was told that they can backdate one though?

They absolutely should not be back dating counseling statements that got you separated from the military. Back dating counselings is a poor practice as-is, but can be understandable in very limited circumstances.
