I have been trying to find the answer in AR 614-200 as well as the 601-280 to find out if my contract would be extended, and for how long? I did not have DLI in my original enlistment contract when I signed, so what are the rules for extension when adding additional training?

The answer you're looking for is in table 4-1 of AR 614-200. It tells you the time you need to attend a school based on the length of the course.
But that's only part of it. What are the specifics of your case?

I’ve looked at the table, but I don’t understand it completely. I have a 64 week course at DLI, and it’s reading that a 32 month SRR is required for that length. Do those 32 months include the 64 weeks at DLI? Or is it 32 extra months that my contract will be extended? The description of the table seems a bit vague to me.

SPC (Join to see) the SRR starts at the end of the course date. Plus, there's another SRR you will incur which is the one for PCS. Two years from report date to your next assignment. Since the 32 months is longer, your ETS should be 32 months from course end or 24 months from report to your next duty station, whichever is longer.
