My average score on ASVAB practice tests are between 69% to 84%. What would you say my odds are of passing the ASVAB with a good AFQT score?

You are average an overall test. AFQT is based off 3 areas. They take your VE and double it, then add it to your MK and AR to get your overall AFQT. It depends on how you do on these areas as to what your score will be.

If I score like a 49 but excel in the mechanics part the electric part the assembling objects part and the auto and shop part would I be okay? The job I want is 15T and I’m confident in the Mechanical side and electrical side aswell which are the two main things you need for the job

Your AFQT is your ranking among others that take the test, not a composite of line scores. While it is based off of those areas, a 64 AFQT, as an example, means you scored better that 63 percent of the sample pool that took the test. There are charts out there that will give you a close idea of where those line scores will land you, but since the official version isn't published, it's just an educated guess. Since the higher your Category, the more job choices, you really want to land in IIIA or II is possible. The point chart I found says you need above 204+ on the line scores to make it into IIIA and 219+ for II. What makes it more confusing is that the Military doesn't publish how it weights individual questions other than stating harder questions are worth more.
When I took mine many decades ago, they gave you subtest scores too. I'm told that isn't standard practice today.
