I've seen a lot of hype about Veterans United, but have not talked to an individual about their experience. Are there other lenders that you used and would recommend? What would you do differently in your mortgage process if you had to do it again?
I will be PCS'ing to Fort Drum in October and am hoping to close on a house by then.

First, interview and select a knowledgeable Realtor. They will have connections with local lenders and understand the loan processing time required which is useful in crafting your offer to purchase. As a sellers agent, I am cautious when a buyer's agent presents an offer with pre-approval from certain lenders and will advise that seller on the "quality" of that offer.

Best advise is to use a bank or credit union that you already have (positive) experience with. The process is pretty much the same everywhere; the only major difference is the level of customer service. Also, I would recommend that if you are able to afford a down payment, you explore traditional financing as well. In many cases, the VA Loan Guarantee does not provide the best rates if you can make a down payment. Your lending institution of choice should review all options with you and assist you in making the best choice based on your particular situation.
