Could you imagine Army and Air Force rank insignias colored based on the Service Members career management field?

Well yes, I can, since the Navy's have been like that for 80 years. Recently obliterated.

Didn't the Army have Branch and Duty specific colors for rank back in the mid 1800's?

Yes, the Army, as late as WW II, had insignia of some type that had the primary branch color on it. During the Civil War, NCO chevrons were branch colored. During WW II, the piping of the overseas cap was primary branch colored. It was later replaced with green for enlisted, gold for commissioned officers, and gold and black for warrant officers.
