Cultural Sensitivity-Another Example of PC Going Too Far?

I initially assumed that this was an Onion article. However, it's apparent that this legitimate.

Because I'm dense sometimes, I couldn't understand the link between Mexican food and the intergalactic theme.

What do you think? Are we so culturally naive that the link isn't initially apparent, or is this a another case of political correctness gone overboard?
