How can I find out (if possible) which ship my Uncle served on during the Korean War?

SPC Chris Bayner-Cwik might be helpful to know what material you currently have. I know my wife's maternal grandfather had some documents from WWII outside of the discharge certificate. He had plank holder certificates, a certificate from becoming a shell back etc.
Have you requested his records from the NPRC?
For enlisted sailors, Navy Muster Rolls: https://catalog.archives.gov/id/594996
For Deck logs and Officer rolls: https://www.archives.gov/research/military/logbooks/navy-deck-logs-1941-1959

SPC Chris Bayner-Cwik resource LTC Jason Mackay referred you towards is what I would have offered you. But always feel free to go to a Veterans Service Officer (Disabled American Veterans, American Legion, your County Veterans Service Officer, and the VA Hospitals usually have a Veteran Service Officer from one of the Veteran Service Organizations).

SPC Chris Bayner-Cwik I don't know if these folks do historical work for veterans/family but if one needed to verify sea duty, according to OPNAVINST 7220.14 24 Dec 05:
After all local attempts have been exhausted to verify service in question (DD-214, evaluation and fitness reports, TAD orders, etc.), requests for verification or clarification of sea periods of a specific ship, a ship-based aviation unit, a ship based staff, a Fleet Marine Force unit, or an embarkable mobile unit, may be forwarded to the Naval Historical Center, Bldg. 57, Washington Navy Yard, Washington, DC 20374-0001. Requests should specify as much information as possible about the vessel, unit, or time period in question.
I am really surprised that a service that prides itself on sea duty there is not a single form that has this data.
