Is it possible to use the most recent Army in/out roster findable on Google to determine anything about how consistently AIT classes are starting for an MOS? I.e. more consistent for understrength and less consistent for overstrength?

Will the most recent on Google be outdated by the time it is available in that format?

No, Army strengths and class seats have nothing to do with each other. Some MOSs stay consistently under strength simply because there are not enough class seats

Nope. Roster only shows when a SM arrives or leaves, not when a class starts. And the whole Covid 19 throws any kind of reliable data out the window.
