I'm a Adjunct instructor, even though I sign everything Adjunct Professor or Professor to my students.

I teach information sciences. I specify to my students that I am an adjunct instructor, not a professor. Some still call me professor, but that's on them.

This Fall will be my start of my fourth year as Adjunct Instructor, over the course of those years, the best way to say it would be, I teach Fine Art, that covers seven different classes. My students called me MR.H or Professor

Undergrads definitely see most--if not all--of their instructors as "professor" regardless of our actual appointed status, especially if we're older, seasoned instructors (as I am). Again, I don't correct them if they forget--we all have bigger fish to fry, so to speak.
However, my nose is bent out of shape over the incoming supervisor consistently sending me notices referring to me as a "senior teaching assistant." And as with my desire to not be elevated above my appointed position, neither do I appreciate being demoted--least of all by someone who should know better.

That is normal. Most people or your students would understand the ranking of academia.... I was a professor for 7 years....aka Adjunct.... aka, part timer!!
