I’m a 19K SSG with 11 years in and am getting medically reclassed due to a back surgery.

You don't really have a choice. You'll have a chance to request several MOS's, but that's just a suggestion. Nor do you get to pick which one you want. Which one you get is based off of what has short fuse class seats (class seats that start 15-60 days away) and what the Army needs. If you don't have a clear ance you'll usually end up with 88M or 92Y. You'll almost never receive 88N as a SSG, the MOS is too small.
Just be aware that the day your MAR2 decision comes back you may be in class within a month. You will be placed on assignment within two weeks of your reclass, you'll need to process your levy packet immediately in order to get your orders, then take that to your DTS people for a 1610. If you aren't ready you're going to be in a world of hurt jumping through hoops at the last second trying to get to school and get paid after

I forgot to mention that my retention NCO only gave me these options when I started my MAR2

SSG (Join to see) your Career Counselor has to select jobs that you're eligible for. If they're a good Career Counselor they are selecting them from the list of AIT class seats instead of asking you for unicorn MOS's that never have any class seats.
When you send up your three, HRC will decide what MOS they will give, it might not be any of those.

SFC Boyd covered it. But as your wish list, read up on what is available and make a decision as to what you consider best suited.
