I'm trying to reclassify for a specific MOS, but my Retention NCO said only three schools have seats near my DEROS. What are my options?

I wanted to re-enlist for 15w but he said it got denied because there were no class dates near my deros date which is also my ets date. He gave me three options that I can reclass to and I have no interest in. What are my options?

Stay in your MOS and pick a new duty station, or pick an application MOS and apply to that, or go to Ranger School and reclass to 11B.

Our friend here wants to be a UAV / Drone pilot, so I don't think the infantry lifestyle is going to be appealing for him. He has also turned down three other options so he seems really determined. Perhaps if he's really good this year Santa might leave him something extra special in his stocking.

No not really. You're stuck with that 60 days from DEROS rule for school seats. You can't change the fact that class dates aren't near his DEROS.
If he's REALLY determined, he can PCS CONUS, wait till he's been on station one year then voluntary reclass, assuming he meets the rank requirements and isn't near his RCP by then.

SPC (Join to see) an MOS that requires an acceptance letter to go into. EOD, counter-intel, CID, and SF are some examples

Your Career Counselor is correct- school seats are limited by your DEROS along with seat availability. The options your Counselor gave you are good, available options. You could possibly PCS stateside and try to reclass on your next reenlistment, although 15 series MOSes will likey not be available to you at that time due to other factors (i.e. rank, retention control point.)
Your Counselor gave you your options- trust them!
