What months do 68F classes start usually start? Is this mos hard to get into? My recruiter told me I have slim to no chances of getting this mos. I’m looking to do inter service transfer and become a PT in the future. I’m very set on this mos, if I was to choose another mos in the 68 series would I have the same chances of becoming a PT?

You're not going to get this MOS, there are very limited class seats in a year. It's first come first serve and you almost certainly will not be sitting there when the class seat pops up.
You can apply to be a PT in the Army as any MOS, you just have to have completed your bachelor degree and meet the prerequisites. Being a 68F has zero effect on being selected. Your MOS has zero effect on whether you are selected.
You can look up the prerequisites under the Army PT Baylor program.
