Trying to find out if I am able to switch MOS once I comission as a Reserve officer or if I’m supposed to stay in the same series. I’m a 25B now and would like to get on either 17 or 35 series MOS.

You definitely can't be a 25B, or any enlisted MOS, as an officer.
You will have an AOC, and branch.
It depends on what unit vacancies are available that you are willing to commute to when you start working with your recruiter.

I was unaware that the Reserves had Cyber teams so I can’t speak much to that but I know they definitely have them in the Guard. If you would like to ‘guarantee’ a spot on a team in Guard go speak with a Guard recruiter, specifically the Cyber recruiter. They have a number of different commissioning options (direct, traditional, accelerated) and usually you will know before you commission whether or not you’ll get the branch of your choice. If for some reason you end up somewhere you don’t want to be, you can always re-branch through Captains Career Course so don’t sweat it too much. Wherever you end up give it your all and you should eventually get to where you want to be. Best of luck to you.

Re-branching works the same no matter Active, Reserve, or Guard in that it is obtained through CCC. I can only speak from my personal Guard experience though but I hold two branches: Signal is my primary through BOLC, and Multifunctional Logistician which I picked up through CCC. I can now sit in a 25A or 90A slot. Now, at some point I'll need to pick a single path and stick with it so I have OERs in one discipline which make me competitive for jobs as I rank up. My state is LOG heavy so for longevity of career I chose Logistics as a second branch. The Guard tends to see a lot of internal movement in positions whereas the Reserves are often more siloed (from my brief experience as an enlisted Joe). It's not uncommon to serve in multiple branches within the same Brigade in the Guard whereas with the Reserves you may have to move to another CO, BN, BDE, etc. in another state to take an opening. Long story short, it might be easier to move around in Guard with multiple branches as opposed to the Reserves. Experiences may differ though so if there are any Reservist O-types with multiple branches reading this please chime in.

You can. It doesn’t necessarily matter your enlisted MOS, it depends on what the Army needs to fill branches. Yes, it’s nice to have experience in your field, but doesn’t have to be the case. I was 35 series enlisted and am branching 13 series as an officer.

SPC Onel Cruz You can complete OCS, and take a Certificate of Eligibility to take your commission at a later date, state dependent.
