Day to day will depend on where you are, but most do cradle-to-grave contracting. You'll help your supported activities develop requirements docs, solicit quotes/offers/bids, evaluate them, and award contracts. You'll also be responsible for ensuring performance is monitored, invoices are processed, and contractors are paid. Lastly you'll close-out completed contract files.

On deployment it's more of the same but a bit more wild wild west with local vendors and cash buys.

Schooling is through the Defense Acquisition University. CON 91 is very regulation heavy in terms of learning how to find, interpret, and apply contract regulations and supplements. From there, most of your training will lean into procurement strategy/contract management/cost & price analysis, contract management/ etc.

Overall 51C's serve as the Army's business experts, so that's what you should expect to be trained to be.

School and daily work are completely different. In school it's mostly regulation and daily is using regulations to actually write the contracts.

Do you obtain the mandatory degree on your own time or do they send you to school?

SGT (Join to see) on your own time. The trial-by-fire involves passing the acquisition training, gaining competence in OJT, and usually going to school part-time using TA after hours. There are schools that will offer generous transfer credit for military (and especially acquisition) training. By the time you're certified, continuing education while managing workload becomes pretty second-nature.
