So meal prep breakfast, lunch, and snacks. Only meal I wing is what the wife makes for us for dinner.
That being said.
Breakfast (after workout): protein shake, 1-2 hard boiled or "egg bites" I cook with veggies in an instant pot, and a granola bar.
Snacks: 2 beef jerky sticks, mixed nuts, dried cranberries.
Lunch: alternate between;
- a salad with chicken, some additional veggies, and low calorie dressing.
- chicken potatoes or rice and mixed steamed or baked veggies.
Those 3 food groups keep me around k -1200 calories then up to 500 for dinner.
However I choose and am used to "low" calorie and even with my current marathon training plan have plenty of energy and drive without feeling too hungry.. except after my long run each week I splurge after and eat more ha.

I meal prep my entire week the weekend before. I eat 6 times a day. I am the type of person that can eat the same thing every day, maybe a hold over from the military.
Breakfast - 4 eggs, 1 cup diced mixed veg and a sprinkling of southwest hash browns and turkey sausage for flavor...based upon hunger add one Kodiak Cakes protein waffle with peanut butter and honey
Lunch - 5-6oz of grilled chicken breast, 5-6 oz of mixed veg and 1/3 cup of cooked quinoa
Dinner - same as lunch with exception of Monday and Tuesday is steak (heavy strength training days)
In between "meals" are grilled chicken breast "snack pack," fresh fruit mix with sugar free low fat vanilla yogurt (to mask the taste of the fruit), and a protein bar.
Weekends are technically a free for all, but I tend to stay with some type of chicken or steak dish with a salad. When I have pushed a few hard weeks then pizza!

The best fitness diet: Vegetarian
The key is the protein you digest. When you digest protein from animals(even eggs, milk, and fish) your blood plasma 'cloudies', your veins restrict and your blood flow is not so good. When you digest protein from a purely vegetarian diet your plasma is unrealistically clear. This expands the veins and allows better blood flow. This has the benefits of lower blood blood pressure, longer workouts, more stamina, and faster recovery times to work out again. There is also the added benefit of more blood flow to the penis giving you a harder erection with a slightly 'girthier' penis.
I switch to an all vegan diet when I was working out 'hard core' and the results were amazing. I went from 7 minute ropes to 30 minute ropes in less than two weeks.
I didn't meal prep, but there are fantastic "fast foods" you can consume like microwaved sweet potatoes, meatless(use beans) tacos, and so much more.
I know it sounds a bit ridiculous, but there is this new documentary, called "Game Changers", which is about athletes switching to a vegan diet. They explain everything and show the science behind it. I urge you to watch it and look up every single thing they say.
These days I do 'vegan' 4-5 days a week. I'll never give up my rib eyes or fish chowder again. Love the taste too much.
Again, if you are into fitness, and trying to better your physical self, a vegan diet will benefit you more than anything. Beet Juice(I find the stuff gross) is fantastic for added stamina.

EDIT: It's also important to note that you can get really fat on a vegetarian diet. I was consuming about 3200 calories a day, but i was eating clean non fried foods.

Presented by James Cameron, Arnold Schwarzenegger, Lewis Hamilton, and Jackie Chan, The Game Changers is an award-winning documentary about meat, protein, and strength. Watch the movie in theatres starting September 16th, 2019.

SPC Martin Wiesiolek - I agree.
I only tried it initially because my gym buddy was a vegan and he outperformed me everywhere. I trusted him to give it a try and the results were exaggeratedly good.
Seriously within just a couple weeks my stamina was better than it ever was and that was without doing anything different in my fitness routine.
But as soon as I went back to eating meat, all that stamina went away.
