While he's not what we American's consider a soldier.....I nominate Miyamoto Musashi.

Any warrior-priest that lived off the land for years at a time, challenging and besting numerous entire schools of various types of warfare all along the country side has to be considered one bad mama jamba. In one particular battle he defeated an acknowleged master samurai with only a wooden / bamboo (depends on who is writing) sword - all while the master samurai had armor and a majestic set of swords - I have to give him the vote for greatest warrior.
