I saw this the other day in a mall. Reminds me why I don't like to go to malls...
There is a difference between foods prepared with liquid Nitrogen and those still containing it. It is used to freeze food (think ice cream) but normally all of the nitrogen leaves as a gas. The latest foolishness is to make it part of the food (bad) as it is very low temperature and can damage the mouth and esophagus.
