The shortages of wheat coming is a good reason to get used to using rolled oats in more ways. Oatmeal gives a good bang for the $$buck, is a healthy “filler,” and has a decent shelf life. We buy rolled oats in the cylinder containers and keep them in a dry place in the basement. Oatmeal is versatile and can be added to various meals to increase the content in a nutritious way. I just made pancake batter using some boxed pancake mix and added oatmeal and ground sunflower seeds. (I buy whole sunflower seeds bagged, and grind small amounts with a small coffee bean grinder.) For more flat pancakes, leave out eggs.

We liked the pancakes very much! Raisins and walnuts can also be added taste and nutrition to pancake mix and other foods such as boxed cereal, hot cereal, salads.

With the continuing increase of food prices, it’s smart to start practicing more ways to be flexible with our available food and still try to eat healthy.
