But a Bitcoin isn't even a tangible object! How do you spend it? How do you make change for it? Can I buy a hamburger with it?

Ok, multi facet question...
1.) Transactions are made via readers like credit card transactions
2.) Bitcoin has its own denominations satoshi, bit, millibit, and bitcoin, based on metric system.
3.) you can purchase any product as long as the vendor accepts the currency you trade in.

I hate blockchain currency because it drives up the price of GPU's, and that makes it more expensive when I want to upgrade my gaming rig.

Seriously only an idiot burns up a video card GPU when they can get 100 times the output with an ASIC Miner dedicated for bitcoin

Depends on the encryption type, and what processes it better. With BitCoin there were new devices that came out that were FAR more efficient that GPU's. This was when the Radeon R9 290X was the king if bit coin mining.

Now, you have Ethereum and what you're speaking of, doesn't work well with it. Which is why the RX 480's, RX 580's, and GTX 1070's are being snapped up so quickly and jacking up the price of the GPU's.

Such a thing is a step towards a global currency, which scares me. Look how the Euro and the countries using it have faired.

Think Euro to the next level. There is no control and that's a problem for me. Different currencies act as a checks and balances system between countries. Examples can be seen with Spain, Portugal, and definitely Greece.
