Best wishes to her in this new role. It's mostly a ceremonial role. In the UK, the Vice Chancellor is responsible for running the institution, whereas the Chancellor presides at graduation ceremonies and acts as an ambassador for the university abroad.

Side note: her husband is revered in North Ireland. While he may deserve scorn for other policies and scandals of his doing, he did help to broker the Good Friday peace accords and North Ireland credits him for that contribution.

Yes, a perfect job for her. No real responsibilities with compensation, a figurehead as it were. I hope they take better care of their "ambassadors" than she did of Chris Stevens.
