Japanese Pro Wrestling is known to have more "shoot" matches than their US counterparts - some of the most violent/bloodiest pro wrestling matches have taken place within Japanese organizations.

Although not a shoot - the Cactus Jack vs Terry Funk death match in IWA is one of the most gruesome/bloodiest wrestling matches I've ever seen. Worth checking out if you're into that kind of stuff.
