Would it be a good choice to reclass to a different field even though I’m soon to be promoted to Sergeant? Signal to Aviation?

Do it. The worst they can say is you can't. I turned down promotions to leave my former MOS. Well worth to go into aviation.

Be prepared to wait a good period of time in order to regain promotable status. You must be MOSQ and have BLC to promote.

You can't Reclass into aviation. It's only open to non promotable E4 and below.

May be different for Active, but I did exactly this from engineers to aviation. I turned down E5 promotions to transfer.

SPC (Join to see) the rules are different for RC. Most of the MOS are allowed to enter at a higher grade in RC
