Why are there colors prescribed for enlisted specific corps?

I know on the ASU Officers shoulder board display the color of their assigned branch. Why is there colors assigned to enlisted specific jobs? We would never were them in our uniform. Are they used else were?

An overseas cap pictured here had colored braid around the upper edges. The Orange brains not deciphered in the photo was for Signal Corps.

I today’s uniform, branch color do not show up on enlisted uniforms. But waaayyyy back then it did on some items.
