Yes, I'm trying to get info on how useful an engineering degree would be to do linux sysadmin and engineering work. I'm already working on an IT degree.

Gaining knowledge in linux system administration is a plus and good thing to have. If in future you plan or walk in to be a developer, the knowledge of linux system will be very useful. For instance, a developer will be quick and smart to install jar and ear files on jvm's & detect infra issues if you're doing production support as well.
