Is it possible to extend my DEROS date by 2 years (to match up with my future wife)?

How long have you already been in Germany and were you on a two year or three year tour? While there isn't a cap for how long you can stay on an overseas tour, the Army doesn't like to go beyond four or five years. If you get your CSM involved, he can have a good chance to lock you in for a pin point assignment, but the longer you stay, the less pull he is going to have. What you'll have to ask for is a Continued Overseas Tour (COT), and a CSM usually has a limited number of names he can request to keep each year.

It's a 2 year tour for me now.. I was kinda curious to if when I reenlist that would push my initial term to 3 years though

Alright, right on...you are on your initial unaccompanied overseas tour...something a lot of people forget is only two years. So yes, it is easy to extend in your case to a three year tour. It will require command involvement, but it isn't something impossible. I can't stress enough how important command involvement is in getting your tour aligned with your future wife's. You need to get your command involved, which means getting your squad leader to vouch for you to the company command, the company command vouches for you at the battalion...which means you need to be a top performer for a CSM to endorse your continued stay. You also need to let them know as early as possible that you want to stay.

Call branch and figure out what available slots are there for your MOS. Trying asking for joint bases but there are slot availables, you just have to ask. If that's not available then you already know what you're going to have to do.
