Why do my posts keep coming out as "Uncategorized" posts?

I obviously do not know how to "tag" my posts, even though I read the guidelines. My posts keep coming out "uncategorized". Help, please.

When you initially make a post, you should be able to add tags. When you post, start typing in relevant topic words into the "Topics" area (red circle). You should have some options pop up for you; select the closest one (and you can add up to five). If you don't add anything, the website automatically adds "Uncategorized".

I've tried this a few times but I guess I'm not coming up with a topic that's in any menu. I'll keep messing with it, though, to get it right. In the meantime, thanks to who it was who categorized my last topic. I can use all the help I can get. Thanks!

I don't use a computer. The phone I have doesn't show a place to add tags. All this time I thought it was me.

This place could do with a change of format.
Other forums are much more user-friendly.
