I'm hearing/reading people saying "I'm old school, therefore..." So out of curiosity's sake, where is that ever-moving line?

Simple answer: YOU are "old school" (or "old Corps") if lieutenants and PFCs look at you the same way you looked at retirees/older vets when you were a lieutenant or PFC. I could add to the growing list, but the lists change over time too.

I just had this discussion with an Army Sgt.this past weekend. We served in different times and branches of service. Thus "OLD SCHOOL" becomes relative to your time in service, and how you interact with those around you. when I was in Vocabulary was loose an F=Bomb was the morning greeting and the list went on both agreed that today's D.O.D. has gotten far to PC and undermines the what the warriors of today are to do.
PC is nothing more than a means to pussification of the military. what is old school knowing that PC dose not win battles in the real world.

Relying on technology too much is dangerous. I'm old school, I still read a map, I keep paperwork, I know how to do things without technology.

Back when dinosaurs used to roam the terrazzo, I knew a Colonel that was enlisted in the Army before there was an Air Force. After WW2, he crossed over to the USAF and was sent to university and then commissioned. That Colonel still had, and once in a while wore, the brown boots the Army had issued him back in the day. I have yet to see anything more old school than that.

I think as soon as new guys show up to your unit with uniforms/gear different than what you showed up with you start calling yourself old school. But there will always be someone who is "older school". Every time I start feeling old school, I find a WWII/Korea/Vietnam veteran and my humility quickly returns.
