Why do there seems to be so many issues with our airlines?

Because they are being squeezed financially and sometimes cut corners to make ends meet.

I am sorry to grave dig, but wanted to put stuff in perspective.
First off you're flying on airlines, that are private entities and heavily regulated by Federal oversight (FAA). Which means a lot of the methods and SOPs employed are written in stone, and any deviation or err on the wrong side, and they pay the price. So it's simple; take care of your business, and if there's an issue, you bring it up after the flight. Raising a stink (like 100 percent of the viral videos) will not serve you well and will incur the wrath of the local authorities.
Secondly, goes back to the Information Age. We have cameras and all sorts of readily available means of streaming. Every interaction I have with a passenger I act like I am on camera, as there is a high likelihood I really am.
Third; because of that exposure, and a news hungry media, all of the mundane and normal things are now suddenly outrageous.
