We are currently at fort Lewis and he is waiting for his packet to be approved. I’m just wondering what the process is for spouses and children while he is in AIT?
Will he get projected orders to a duty station?
Does he get to request a duty station?
Do we stay behind at our current duty station or go with him to AIT? Or if he gets projected orders do we move there? I’m just really trying to figure out what’s going to happen and trying to see if we are just going to be in limbo. I’m a little scared, I don’t want to be separated for an entire year.

If the school is 20 weeks or longer, it's a PCS. If it's less than that, it's TDY Enroute.
If it's TDY Enroute your husband should receive his follow on assignment no later than 90 days from the start of training. Unless he is going to Korea unaccompanied, he should be allowed to return to the post to clear and move family, but you can also move ahead of him to the next post while he goes to school. When he receives his levy packet in the email (make sure he checks his email, JBLM does it by email) he will have the option to move you ahead, let you stay, or you leave on your own while he's at school.
You didn't say what MOS, but if it's a packet, there's a two step process. First he gets an acceptance memo from the MOS and THEN he submits the Reclass and gets a school date. Getting an approval on the packet does not equal getting a class date for the MOS or an approved Reclass.

Jessica Acosta his is a two phase MOS. He will get a class date and 90 days prior to training start date he will get his follow on assignment. Unless his phase two is at fort Sam, in which case you just move to Fort Sam at the start. But generally speaking he will go to Fort Sam a few months, return to clear and then you both move to the second phase together.
That's assuming he gets a class seat. I haven't seen a 68C class seat in months.

Take what I say lightly until someone else can verify but I’m almost certain any school over 6 months is a PCS move which would include all of you.

Yes, that is correct, the school as to be 180 days or longer before it is considered a PCS move.
