There is a delicacy in the Philippines called balut. It is essentially a duck almost ready to hatch boiled in the egg and served.

Actually balut is common throughout Asia. It's duck, chicken, hawk, whatever bird egg can be found. My husband had it in Nam when the ARVNs took the squad into a village. They brought out a bowl of eggs (GIs thought there were hard boiled eggs) and Panther Piss. ARVNs used a small spoon to tap off the top of the egg shell then scoop out the embryo. GIs ate at least one to be polite. My husband thought it was too chewy and bland. Guess they didn't have their Army issued Tabasco sauce with them. Lol!!
