Food history is fascinating and how, like people, it spread from one region to another. Cheesecake surprised me.
I have often thought that turning grain into flour to make something edible that was not as palatable as chewing on grain, also more long lasting than cooked grain, was genius - and/or indicated a time of famine when creativity turned what may have been considered inedible into filling food.
