Here is an old February 2021 "Last Week Tonight" segment about the American meat industry. As you mentioned, workers sadly make poverty wages while the industry is primarily controlled by an oligopoly of just four mega-corporations. Worker safety and cleanliness are also a concern due to hectic pace and close proximity.
