I never will be able to understand how an employer can fire an employee for protecting him/her self. It boggles my mind.

This is true and wrong. However, employers are now afraid of getting sued by criminals so they would rather see their employees injured or killed than allow reasonable response.

Because employers would rather pay to clean up your corpse off the floor from a robbery than to risk being sued by someone shot with a private firearm. I worked at a gas station some 15 years ago. Corporate big wig made it very clear that he didn't care if I lived or died at the register, so long as I didn't cost him too much money.
