I've never made the same cookie twice for Xmas. This year I'm doing Italian Almond cookies as made by a group of Franciscan monks. It's the closest to a recipe from the time of St. Francis of Assisi, and apparently he was so crazy about them he even asked for them on his deathbed.

So I didn't get around to making Italian Almond cookies, but the recipe was still historical. If one reads up on one of the first known bakers/cooks/etc. Amelia Simmons I made a slight mod to her "Christmas Cookey" recipe. Everything about it except the spice I kept the same. Since I didn't have any coriander I did a combo of nutmeg, cloves, cinnamon, and allspice. Resulted in a very Christmasy flavored cookie, and without the sugary punch of most modern recipes.
