I have Firefox, Opera and Edge on my Windows 10 machine. I use all three. Never had a problem with the default app being changed unexpectedly.
However, a company can set group policies on Windows 10 machines that are domain attached or are connected to a school or work account. These machines become "managed" and all sorts of settings can be set by an admin that will over ride any changes a user makes. This is by design and not a fault.
Bigger problem for me is how certain browsers always seem aligned to Google even if Bing is designated search engine. For example in Opera browser, only Google is offered as the Search Engine on the Speed Dial tab even though the default is set to Bing.
Chrome is even worse. Everything is tied to Google.
