Oh my Lord how I would love some tacos right now! I've just spent a couple of days in the hospital with a bowel infection. Food has not been on the Forefront of my vocabulary. But yes, we have great tacos. Real tacos. Not the crunchy ones that Americans buy or make. Soft tacos with meat and cheese and cilantro and onion. We can throw some tomato on there if that's your deal.
Prepare the meat in advance - I prefer chicken - along with mince up some cilantro and onion. Heat the corn tortilla up in a pan on the stove, remove it and then lay down a bed of cilantro and onion topped off by chicken. Now is yummy time. If you're looking at making a meal, make some refried beans and perhaps some salsa to put on your taco as well. Buena comida!
