My personal take, if you’re buying new and stick with a major brand, you should have little to worry about. I have a carbon road and aluminum mountain bikes. I’ve had the road bike with its carbon fork and frame take unexpected potholes, etc without issue, as have the carbon rims. Just like anything you have to inspect occasionally to look for damage, but particularly after any sort of collision.
For what you’re saying you want to ride, you may want a mountain or hybrid with a front suspension, as it will make long days off road much easier.

The only issue I have had with my carbon framed high racer recumbent is a week prior to racing in Sebring Feb 2018 my bike store found cracks in one of the carbon front forks, put a used one on, no problems since wither the frame or fork. Have had the bike 9 years.
