Sage green has long been a color used by the Air Force, but it probably isn't the ideal color for maintenance coveralls.
I'd guess that the ideal 'color' for coveralls would be something like the German flecktarn camo pattern but in black, dark brown, and dark grey.
Reminds me of the one time I had to pick a carpet color for our office -- I don't recall what the carpet company called the color, but we all knew it as Coffee Brown.

Coveralls are great for dirty jobs, but should be changed before going out in public or home. I worked in a truck shop for a while where we were provided with coveralls so we didn't get our regular clothes grungy, and didn't have to take the grunge home with us.
