OK, the response of a Farm Boy. Don't want your beef to be marbled, buy grass feed beef instead of grain feed. It's not uncommon around here, but you are going to pay a 25%+ premium on that beef. There are also several large Bison farms around and that meat is a premium even over the grass finished beef. Put that Bison in a feedlot and finish him on a diet of corn, that meat will have a higher fat content.
As we progress away from the narrative that fat is bad for you, fat is only unhealthy if you eat 2000 calories worth of carbs on top of it and don't get any exercise. We are designed to process fat just fine, better than we handle large quantities of carbohydrates.
