My favorite explanation is that bugs are placed in a vat of sugar water and the bugs eat the sugar and poop alcohol. Eventually there is more poop in the water than sugar, and the bugs strangle on their own poop and die.
Then, if the bugs are left in the water to rot, the water becomes vinegar and we put it on our salads; but if we strain the bugs out of the poop water, it is called alcohol, and we drink it.
Yum.

Interesting topic. The Military at least at one time seemed to breed drinkers. Certainly a part of being in the Military and serving in Germany at the time.
